This chicken is filled with flavor and it’s just as good at the chicken from Chipotle, but it’s healthier and cheaper to make for a crowd. The key is to let is marinade for at least 6 hours to allow the flavor to really soak in.

I’ve used this chicken so many ways and it tastes amazing on all of them. You can use it on a salad, burrito bowl, tacos, a salad, or nachos. I usually do tacos or a burrito bowl, but I’ve never been disappointed eating it.

Cilantro lime rice is from Target. They recently changed the packaging, but it’s still the same product. I panicked when I thought it was gone! I just cooked this according to the directions on the package.

Add whatever toppings you like. I recommend:
Sheet pan fajita vegetables (slice peppers and onions, spray with oil, and bake a 375 for about 20 minutes)
Tomatoes sprinkled with tajin
Black beans
Cheese
Sour cream
Salsa and hot sauce
Guacamole (my avocados weren’t ripe when I made this)
Lettuce
Lime juice and cilantro
Anything you like!

The Recipe
What you need
▪️About 1lb. of chicken breast, sliced thin or pounded flat
▪️1 1/2 T. Red wine vinegar
▪️2 T. Avocado oil
▪️2 T. Chipotle peppers in adobo sauce, diced the peppers and include some of the sauce
▪️2 T. Minced onion
▪️1/2 T. Minced garlic
▪️1 t. Cumin
▪️1/2 t. Salt
▪️1/2 t. Pepper
What you do:
1. Mix the marinade together and pour over chicken breast. Let it marinade for at least 6 hours. 24 hours is best.
2. I cook it on my George Forman or ninja grill, but it can be cooked in the stove top or on a regular grill. Cook until the center reaches 165 degrees. Cook time will vary depending on how you cook it.
3. Serve with what you want!
This chicken would go well on tacos, burritos, nachos or taco salad too!
