Healthyish Chocolate Chip Cookies

If that doesn’t looks like the perfect chocolate chip cookie, I don’t know what does. Not every dessert needs to be healthified, but if you’re looking for a healthier cookie I created a delicious alternative! It’s also gluten free if that’s something you need.

Here’s all the ingredients. None of these are difficult to find so you don’t need to go to a specialty store for anything which is truly important to me. Not everything pictures is from Aldi, but you can find everything you need from there.

Half stevia and half brown sugar keeps the flavor, but cuts down on the sugar content. Almond flour increases the fiber, protein, and healthy fats compared to regular flour. And it all comes together to make a delicious dessert.

Substitution recommendations:
-Butter would work in place of coconut oil, I just love the flavor of it when baking! Coconut oil isn’t any healthier than butter. It’s just a flavor thing for these.
-If you don’t like stevia, you could definitely use all brown sugar in the cookies or another no-calorie sweetener.

Healthyish Chocolate Chip Cookies

What you need:
1/2 cup coconut oil, room temperature
1/3 cup stevia
1/3 cup brown sugar
1 large egg
1 Tbsp vanilla extract
2 cups almond flour, sifted
1 Tbsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
2/3 cup no sugar added dark chocolate chips ( I like the ones from Lily’s sweets)

What you do:
1. Combine coconut oil, stevia, and brown sugar together with mixer until smooth and combined. If your coconut oil is too firm, heat in microwave for 10-15 seconds until softened.
2. Add egg and vanilla. Mix until combined.
3. Mix together dry ingredients- almond flour, cornstarch, baking soda, and salt in a separate bowl.
4. Add dry ingredients to wet and mix to combine. Fold in chocolate chips.
5. Put dough in fridge for 20-30 minutes.
6. Preheat oven to 350 degrees Fahrenheit.
7. Use cookie scoop to scoop 1.5-2 Tbsps of the dough onto the baking sheet.
8. Bake for 11-13 minutes or until slightly brown.
9. Cool on a rack and enjoy!
