This Summer Pasta Salad has been our go-to recipe this grilling season. It makes for a great side dish or just add grilled chicken for a complete meal! It would also be a great side dish to bring to a barbecue or potluck. And I actually measured the ingredients this time so that I could share the recipe since I normally just add until it tastes right. If you think this recipe makes too much, you can definitely halve the ingredients for a smaller batch, but we love this pasta salad so much that just two of us finish it in less than four days!

Just add your favorite protein for a complete and balanced meal. This Pasta salad made the perfect side for any potluck, barbecue, or cookout, but its perfect as a full meal at home if you just add your favorite protein.


Easy Summer Pasta Salad Recipe
Ingredients:
• 1 box Tricolor Rotini Pasta (or your favorite rotini variety), cooked according to package
• 1 pint Cherry Tomatoes, quartered
• 1 large Cucumber, sliced into rounds then cut in thirds
• 4 Light String Cheese Sticks, cut into slices
Dressing:
• 3/4 cup Italian Dressing
• 2 Tbsp. Olive Oil
• 2 Tbsp Red Wine Vinegar
• 1.5 Tbsp Minced Onion
• 1/2 tsp Garlic Powder
• 1/2 tsp Dried Oregano
• Salt and Pepper to taste
1. Cook pasta, drain, and rinse with cold water.
2. Cut vegetables and cheese.
3. Whisk all dressing ingredients together in a large bowl. ✨Pro tip: Use a bowl or storage container that is large enough to hold all ingredients so you don’t have extra dishes!
4. Mix pasta, vegetables, and cheese into the dressing mixture. Stir to coat.
5. Chill in the fridge for at least 1 hour, but 6 hours is recommended
