Balsamic roasted carrots

I always tell people to try roasting vegetables if they don’t like them, so I decided to share a super easy way to prepare any vegetables. I used carrots, but this would go great with broccoli, cauliflower or Brussels sprouts too! It’s not really a recipe, but it’s how I cook when I’m not coming up with a recipe.

I served mine with premade chicken for easy protein and topped it with balsamic glaze and feta. It was so good and so easy. I also had some sourdough bread on the side. It was the perfect weeknight meal.

Balsamic roasted carrots

What you need:
7-8 large carrots, cut into coins
1 Tbsp balsamic vinegar
1 Tbsp maple syrup
1 Tbsp avocado oil
1/2 Tbsp garlic herb seasoning
1 tsp minced onion
➕Salt to taste, added after cooking

What you do:
1. Preheat oven to 425 degrees Fahrenheit.
2. Combine all ingredients except salt in a bowl and toss to coat.
2. Place on baking sheet and roast for 30-35 minutes, stirring once during cooking.
3. Serve and enjoy!
